What does “Quality” really mean in an Olive Oil? (And how do we achieve it at Cruz Oliva Oils)

In the supermarket, we see dozens of bottles with labels that say “Extra Virgin,” “Superior Quality,” or “Special Selection.” But do we really know what makes the difference between a mediocre oil and a true liquid gem?

Today we want to reveal the process to you. We want to explain what quality means in the world of olive oil and how, at our family-run olive mill in Santa Cruz de Mudela (Ciudad Real), we work every day to ensure that every jug and bottle of Cruz Oliva Olive Oil approaches perfection.

The three pillars that define the quality of an oil

For an olive oil to be considered Superior Quality (Extra Virgin), it must meet three sacred requirements that allow no shortcuts:

  1. Almost nonexistent acidity: Acidity measures the percentage of free fatty acids. The lower the acidity, the healthier the olives and the cleaner the oil. An excellent extra virgin olive oil is usually well below the legal limit (0.8%).
  2. Complete absence of defects: In an official tasting, the oil cannot smell or taste rancid, musty, or fermented. It should smell of the countryside, fresh grass, and healthy fruit.
  3. Mechanically cold-pressed: The oil must be extracted exclusively by mechanically pressing the olives at a temperature below 27°C (81°F). Heating the oil to extract more will destroy its quality.

The olive’s greatest enemy is time. If harvested olives are left piled up for days, they begin to ferment. At Aceites Cruz Oliva, we process the harvest almost immediately in our own family-run factory. We cold-press the olives within hours to lock in the fresh aromas of our La Mancha region.
